Hot Honey Taco-Stuffed Sweet Potatoes

Savory taco-seasoned ground beef, caramelized sweet potatoes, creamy cottage cheese, avocado, and a drizzle of hot honey make an easy, filling dinner. The combination sounds unexpected, but it's one of our family's favorites.

Ingredients

  • Larson Angus Beef ground beef
  • Sweet potatoes
  • Olive oil
  • Your favorite seasonings for the sweet potatoes
  • Taco seasoning
  • Cottage cheese
  • Avocado
  • Hot honey
  • Optional: cilantro, lime, green onions, salsa, or other taco toppings you love

Instructions

  1. Cook the sweet potatoes. Cut them in half lengthwise, rub with a little olive oil, and sprinkle with your favorite seasonings. Roast cut-side down until tender with golden, caramelized edges. Baking, air frying, or microwaving also works if that's easier for you.

  2. Cook the beef. While the potatoes cook, brown the ground beef thoroughly and season it with taco seasoning.

  3. Fill and finish. Turn the cooked sweet potatoes cut-side up. Pile on the seasoned beef, cottage cheese, and avocado. Finish with a drizzle of hot honey and any other toppings you like. Serve warm.

Our tip: Don't skip the hot honey—the little bit of sweet heat brings the whole bowl together.
