Thai-Inspired Coconut Beef Broth Bowls

We first made these bowls the week Lincoln arrived in Thailand. He was especially close in our thoughts and prayers, so we brought a little taste of Thailand to our kitchen at home.
Crispy caramelized ground beef, jasmine rice, and creamy coconut curry broth come together with plenty of fresh toppings. Our batch wasn’t overly spicy, and even the younger kids and their friends finished their bowls. This one is staying in our rotation.

Ingredients
Crispy beef
- 1½ lbs. ground beef
- ⅓ cup coconut aminos
- 2 Tbsp. hoisin sauce
- 3 Tbsp. rice vinegar
- 2 Tbsp. brown sugar
- 4 cloves garlic, minced
- 1 tsp. grated ginger
Coconut broth
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 tsp. grated ginger
- 2 Tbsp. red curry paste
- 3 cups beef broth
- 1 can full-fat coconut milk
- 3 Tbsp. coconut aminos
- 1 Tbsp. lime juice
- 1 tsp. fish sauce
- 1 Tbsp. sesame oil
For serving
- Jasmine rice
- Mini cucumbers
- Red bell pepper
- Green onions
- Lime wedges
- Honey-roasted peanuts
- Chili crunch (optional)
Instructions
Cook the rice. Prepare the jasmine rice according to the package directions.
Brown the beef. Brown the ground beef in a hot skillet, leaving it undisturbed for a few minutes to develop crispy edges.
Add the sauce. Whisk together the coconut aminos, hoisin sauce, rice vinegar, and brown sugar. Add the garlic and ginger to the beef, then pour in the sauce. Cook until the beef is cooked through and the sauce is reduced and caramelized.
Make the broth. Heat the olive oil in a saucepan. Cook the garlic and ginger for 30 seconds. Add the curry paste and cook for 1 minute. Whisk in the beef broth, coconut milk, coconut aminos, lime juice, fish sauce, and sesame oil. Bring to a gentle simmer.
Assemble the bowls. Add rice to each bowl, ladle in the broth, and top with crispy beef, vegetables, lime, peanuts, and optional chili crunch.
Kitchen tip
To thaw frozen beef, place it in a sealed, leakproof gallon bag and submerge it in cold water. I use a small suction strip to hold the bag beneath the water. Change the water every 30 minutes and cook immediately once thawed.
