Easy BBQ Beef Sandwiches

You asked for an easy, low-prep summer meal, and we’re deliverin’ just that! Perfect for those busy nights or when you’re feeding a crowd! This 4 lb beef arm roast took hardly any time to prep but turned out so tender and juicy, bursting with flavor. It’s like the comfort of a good ol’ country BBQ, but kicked up a notch!
When it comes to slow cooker roasts, I don’t follow a strict recipe. I just grab what’s in the fridge and pantry, and it always turns out delicious. You can’t go wrong with Larson Angus Beef!
Ingredients:
- 1 (4lb) beef arm roast
- Coarse salt & pepper
- 2 Tbsp olive oil
For the Sauce:
- 1 spiced orange bell pepper (or any pepper you have)
- 3/4 cup ketchup
- 1/8 to 1/4 cup mustard
- 1/4 cup pickle juice (I use bread and butter pickles)
- 1/2 cup BBQ sauce (I use Kinder's Cali Gold)
- 1/4 cup honey mustard salad dressing (I use Skinnygirl)
- 2 Tbsp bacon jam (I found mine at Walmart - Midwest brand)
- 1 tsp salt
- 1/2 tsp pepper
- 1 Tbsp garlic powder
- 2 Tbsp dried minced onions
- 1/2 cup brown sugar
Instructions:
1. Sear the Roast:
Heat up the olive oil in a cast iron skillet over high heat. Generously season the roast with salt and pepper, then sear it on all sides until it’s got that nice, brown crust.
2. Prep the Sauce:
Once the roast is seared, place it in the crockpot. Top it with the spiced orange bell pepper, ketchup, mustard, pickle juice, BBQ sauce, honey mustard dressing, bacon jam, salt, pepper, garlic powder, dried minced onions, and brown sugar. Give it a quick stir to combine.
3. Set It & Forget It:
Turn the heat to high and let the crockpot do its magic. Let it cook for 4-6 hours—6 hours for us.
4. Shred the Beef:
After the long wait, remove the roast and set the bone, peppers, and any large fat pieces aside. Shred the beef with forks (but try to keep the hungry cowboys away for a bit!) Return the shredded beef to the crockpot and let it simmer for another 15-30 minutes while you get those side dishes ready and toast up your buns.
5. Serve & Enjoy:
Pile that savory, sweet, and slightly tangy beef on your buns and get ready for the most delicious BBQ beef sandwich of your life. We served ours with oven-roasted broccoli, curly fries, and coleslaw—though let’s be real, that beef was the real star.
